A few people have asked me what Jacob and I typically eat while traveling. The answer -at least for the past 2 months- has got to be tacos. Literally all types of tacos, breakfast, chicken, steak, ground beef. We have even made ground elk tacos with meat that we got while in Taos, NM and fish tacos made from mangrove snapper that Jacob caught while we were in the Florida Keys.
In my opinion, they are one of the most versatile cuisines, are easy to make, and don’t require too much time or effort.
This article will cover our go-to breakfast tacos recipe, my taco meat seasoning recipe, and a one pot burrito filling.

Breakfast Tacos
We went on a camping trip with some friends recently and made these for the group. They were a crowd favorite! So quick to put together and absolutely delicious.
Ingredients (Recipe for 2 people):
- Tortillas (flour or corn; recommend 2-3 per person depending on size)
- Eggs (4-6 depending on how much food you want)
- 0.5 lb Chorizo or ground beef (see taco meat seasoning recipe below if you’re using this)
- 2 Scallions
- 1 Bell Pepper
- 1 Avocado
- Pico De Guillo
- Queso Fresco (a MUST!!)
- optional fresh cilantro
Process:
- Prep your vegetables by chopping the bell pepper into small chunks and cut the scallions into thin pieces, separating the white portion of the scallions from the green. Cut your avocado into slices. Crumble some of the queso fresco to add on top of the tacos.
- Place a pan on medium heat on your stove and allow to get up to temperature
- when hot, add a bit of your favorite cooking oil and add the Chorizo/seasoned ground beef into the pan. Sautee until cooked through.
- While this is cooking, crack your eggs into a bowl and whisk until combined.
- When fully cooked, remove the meat from the pan and place in a bowl. Add a bit more oil to your pan and pour the eggs in.
- Add your bell pepper and the white portion of the scallions into the pan. Scramble with the eggs. Add salt and pepper to taste.
- Once complete, heat your tortillas if desired and assemble your tacos!
Hailey’s Favorite DIY Taco Meat Seasoning
This taco seasoning is so easy to make and doesn’t contain all of the gross fillers that can be found in many of the store-bought options.
Ingredients for 1 lb of Meat:
- 2 Tbsp Chile Powder
- 2 tsp salt
- 2 tsp pepper
- 2 tsp Garlic Powder
- 1 tsp Cumin
- 1 tsp Paprika
- optional 1 tsp of Turmeric
- optional 1 tsp of Red Pepper Flakes
Use this seasoning like you would any other taco seasoning!

Our Go-To One-Pot Burrito Dinner
This recipe is so easy and one of our favorites. We usually make enough for a few meals.
Ingredients:
- 1 lb of your meat of choice
- 1 Can of El Pato Sauce
- 1 Small Onion
- 1 Bell Pepper (or Publano)
- Any other veggies you have: zucchini, summer squash, butternut squash, jalapeno, etc
- Tortillas
Process:
- Heat a pot on the stove and add your oil of choice. Place your meat and onions in the pot and cook.
- When the meat/onions are nearly finished cooking, add your other veggies and the can of El Pato. Allow to simmer until the veggies and meat are fully cooked and most of the water released by the veggies has boiled off.
- Add a bit of flour or cornstarch if needed to thicked the mixture
- Throw it onto tortillas and enjoy!
