I can not even begin to describe how much I love potatoes. Or how much I love breakfast foods. Needless to say, breakfast potatoes really start my morning off the right way.
This is an airfryer recipe, so if you don’t have one – that sucks! Just kidding – an oven works perfectly fine. I just make mine in the airfryer. I have made them in the oven at 450° for the same length of time. But feel free to just watch for crispiness levels.

Also, potatoes are a fantastic source of Vitamin C, potassium, and fiber. I have been trying to eat more micro-nutrients to support overall body health, and potatoes are such a great source of overall nutrition.
Recipe
- Russet potatoes
- Olive oil (avocado or vegetable oil work just fine)
- Salt, pepper
- Any other seasonings
- I use: garlic powder and turmeric
Instructions
- Preheat your Airfryer for 380°
- Dice the potato
- Rinse the potatoes in the water twice to get some starch off them (it helps them crisp up better)
- Dry the potatoes
- Mix the potatoes, oil, and seasoning in a bowl
- Add into the airfryer and cook at 380° for 15-18 minutes





These potatoes go amazing with most breakfast foods. Next week I will be posting my favorite breakfast sandwich to pair with these! If you combined that with Hailey’s favorite coffee substitute you are in for a pretty spectacular breakfast.
