Vegetable-Packed Breakfast Sandwich: Best Start To The Morning

Recently I have been trying to eat more vegetables, in general, but also because how many we are getting from the garden! Also, it is kind of crazy how important micro-nutrients are for your overall health and you can get a lot of amazing vitamins and minerals from veggies. This vegetable-packed breakfast sandwich has so much variety to it too.

Starting the morning with a sandwich packed with veggies is such a great way to start your day, plus it helps you get a lot of nutrients into your body at the top of your day. But I would say even more importantly: this sandwich is AMAZING. You don’t really notice how many veggies you are eating, and it feels so light and also filling.

However, I am aware how expensive buying fresh vegetables can be. Lately Sammy and I have been pretty low on spare funds and this sandwich is great because you can use the leftover vegetables easily in other dishes, or you can get multiple uses for sandwiches all through the week.

Recipe
  • 1 or 2 slices of Bread (I use my Sourdough bread or Sourdough bagels*)
  • Handful of Greens (spring mix, spinach, lettuce, arugula)
  • Tomato
  • Cucumber
  • 1/2 an Avocado + lime
  • 1 Egg
  • 2 slices of Bacon

*The sourdough bagels taste amazing for this sandwich, but I will warn you there will be a bit of a mess while eating. If you are looking for a clean sandwich a softer loaf is way better.

instructions
  1. Cook the bacon
  2. Cook the egg in the bacon grease (or not)
  3. Toast the bread
  4. Cut the veggies and assemble
    • I like to dice the cucumber small and mix it into the avocado
    • Also, I like to squeeze some lime juice into the avocado too!

This is genuinely such an amazing sandwich and you can really add or subtract any of the veggies you want to add. This is my personal preferences, but also if you like all the components I 10/10 recommend trying this as a starting point!

I really like to pair the sandwich with my airfryer breakfast potatoes! If you can’t tell, I feel very passionate about breakfast food.
