My Favorite White Bean Chicken Chili Recipe

Growing up, my favorite time of the year was always the fall. I loved playing in piles of leaves, cozy rainy days, and all of the soups my family began cooking. Fall (and winter) are the perfect time for warm savory foods. This recipe is the epitome of that cozy feeling for me. This rich chili is a perfect transitional meal as we enter the peak of fall time. The Mexican spices, creamy broth, and savory chicken make for a filling and satisfying meal that makes for amazing leftovers.

My White Bean Chicken Chili

This recipe is nearly identical to the chili that my mom always made growing up, but has an added Mexican flair (primarily through the addition of spices and some toppings). It’s an easy one pot meal that can be made in about 30 minutes.

Ingredients

  • 2-3 cups of chicken (either a rotisserie chicken shredded or any cut you prefer cut finely)
  • 5-6 cups of chicken broth
  • 1/2 bell pepper, finely chopped
  • 2 cans (16 oz) of white beans (I recommend Northern White or Cannellini)
  • 1 lime, juiced
  • 1 bunch of fresh cilantro, chopped
  • 2 ears of corn, kernels cut off (approx. 1.5 cups)
  • 1 small (4 oz) can of diced green chiles
  • 1 Onion, diced
  • 2 tbsp garlic (minced)
  • 1 tbsp turmeric
  • 1 tbsp oregano
  • 1-2 tsp cumin (to taste)
  • 2 tsp paprika
  • salt and pepper to taste
  • 1/2 cup of cream, milk, or sour cream
  • optional crumbled cotija as topping
  • optional crushed tortilla chips as topping
  • optional sliced avocado as topping

Process

  1. Put a pot on medium heat on the stove. When properly heated, add butter or olive oil (per preference) to the pot.
  2. Add onion, garlic, bell pepper. and chicken (if raw). sautée until browned or mostly cooked.
  3. Add broth, beans, chicken (if pre-cooked), cilantro, corn, lime juice, and spices, mix well and allow to simmer for 10-20 minutes
  4. Once everything is cooked (especially the corn) and the soup appears to be well incorporated, test the level of spices and adjust as necessary.
  5. Finally, turn off the stove and add your cream/milk/sour cream. Mix well until incorporated.
  6. Serve and add any toppings. Enjoy!
