Korean Pork With Broccoli and Gochujang

Hello everyone! It’s been a while. In the two months since I last posted, so much has happened. The Holidays, getting violently ill for a few weeks, and moving across the country. Now that I am starting to get settled into my new home, it’s time to start posting again! Please enjoy this DELICIOUS Korean Pork recipe. The marinade/sauce has become a go-to of mine over the past few months.

I have been on a big Korean food kick this winter. While in Michigan, I went to a vide variety of Korean restaurants and made a point to learn how to make a few Korean recipes at home. The one I am sharing today is a favorite that I have been making regularly. The recipe I am sharing today is very similar to Jeyuk Bokkeum, which is also known as pork bulgogi.

This recipe requires some preparation at least 8 hours beforehand, but the results are so worth it and allow for dinner to come together in about 30 minutes.

Korean Pork with Broccoli and Gochujang

Some of you reading this may not know what gochujang is. Gochujang is a paste made from red chilis, rice, fermented soybeans, and salt. It’s spicy, a little sweet, super savory, and has a little funk at the end that is absolutely delicious. It has quickly become a must-have in my kitchen.

Ingredients

  • 1 lb Pork thinly sliced (I used a pork roast sliced thin, but use what you have)
  • 2 cups broccoli, broken into small pieces
  • 1 cup rice, cooked

Marinade Ingredients

  • 1 large onion, diced
  • 4 tbsp gochujang (this is a necessity for the recipe)
  • 2 tbsp Garlic
  • 2 tbsp ginger
  • 1 tbsp sesame oil
  • 4 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • .5 tbsp cayenne powder
  • .5 tbsp chili powder
  • optional kimchi

The Process

  • Mix all of the marinade ingredients together in a bowl or container with a lid. Made sure this container is large enough to hold all of your pork.
  • Once the marinade is mixed together, add the sliced pork and mix well. Cover and place in the fridge for at least 3 hours, but up to 24 is ideal.
  • Before preparing your meat and broccoli, prepare the rice using your preferred method
  • When you’re ready to make this dish, remove the pork from the fridge and add to a large pan with your oil of choice on medium heat. Immediately add the broccoli and cover the pan with a lid. You will want to add the broccoli right away because the pork sliced pork does not take long to cook.
  • Allow the broccoli and pork to steam, stirring and checking every few minutes. It should take about 15 minutes for the broccoli to soften and for the pork to cook. Keeping the pan covered will also save water during the cooking process, naturally turning your marinade into a sauce that will perfectly flavor the rice that you eat this dish with.
  • When everything is properly cooked, remove from heat and serve with rice. Add Kimchi for a delicious and flavorful topping.
