I’m not sure about you, but there is something about Spring that makes me want to eat anything and everything lemon. The flavor complements the weather starting to warm up and the plants starting to come back to life so well. To honor that spring-time lemony goodness and the end of citrus season, here’s a lemon blondie recipe that I made recently.
This recipe is inspired by this one that I found on instagram.
This was so easy to throw together and went beautifully with a cup of coffee. I took this in to the office and my coworkers loved them too!

Lemon Blondie
These blondies are rich, fudgy, and pack a lemon punch. They’re absolutely delicious and the glaze on top is a MUST have.
Ingredients
- 1 cup brown sugar
- 1 stick (1/2 cup) melted butter (I use salted)
- 2 large eggs
- Juice of 2 large lemon (reserve 1/4 of the juice for the glaze)
- Zest of 2 large lemons
- 1.5 cups all purpose flour
- 1 tsp salt (only if using unsalted butter)
- 2 tsp vanilla
- 1 cup powdered sugar
- optional blueberries or raspberries
Process
- Add a layer of butter to an 8×8 pan (ideally glass) and preheat your oven to 375 degrees.
- In a large bowl, mix melted butter and sugar together. Once mixed, add lemon juice, vanilla, zest, and eggs, mix again.
- When everything is well mixed, add flour (and salt if you used unsalted butter), mixing again until the ingredients are just combined.
- The resulting batter should be thick, similar to the consistency of brownies. Pour into your pan. Add berries on top if you are including them.
- Bake for 20-25 minutes, until a toothpick or fork comes out clean when poked into the center of the pan.
- Remove from the oven and allow to cool.
- For the glaze, mix powdered sugar and lemon juice together for glaze. Start by adding small amounts of the lemon juice to the sugar, mixing regularly until all of the lemon juice is added. This helps to avoid clumping.
- pour the glaze over top and allow to set (30 minutes).
- cut into pieces and enjoy!
