This banana bread recipe is my absolute pride and joy. I put this recipe together for the first time during the lockdown in 2020 and have been using it ever since. It makes the most delicious bread that isn’t too sweet, has a great texture, and has a wonderful depth thanks to the sourdough.
You’ll also notice the addition of the banana on top. I tried this after seeing it online in 2020 and have not strayed from this method since! The sticky, slightly caramelized banana on top is a delicious addition to this bread.

The Recipe – Sourdough Banana Bread
If you have a bread pan, make sure to use it for this recipe!
Ingredients
- 3 bananas (2 for batter, 1 for top)
- 2 eggs
- 1 cup of your jam of choice (I prefer apricot for this recipe, but strawberry or blueberry are also good)
- 1 stick of butter (salted), melted
- 0.5 cup sourdough starter (unfed)
- 2 tsp cinnamon
- 2 tsp baking powder
- 1.5 cups flour (I use bread flour, use 2 cups if you want to use all purpose)
- a few pinches of sugar
- optional 0.5 cup pecans
- optional 0.5 cup chocolate chips
Process

- Butter your bread pan and pre-heat the oven to 350 degrees.
- In a mixing bowl, mash two bananas before adding eggs, jam, melted butter, and sourdough starter. Mix well.
- Next, add in your dry ingredients, cinnamon, baking powder, and flour. Mix well until combined.
- Add in any additional ingredients like pecans or chocolate chips and mix to combine.
- Add batter to your buttered bread pan. Then, peel your last banana and cut it in half down the middle, vertically. Lay the banana on top of the bread pan with the middle of the banana facing up. Sprinkle the top of the banana with some sugar.
- Place in the oven and bake for about an hour, or until a fork poked in the middle comes out clean.
