Refreshing Watermelon Drink

I am going to assume that everyone can understand the importance of a good hyper-fixation drink or food. Well, my current hyper-fixation is this blended watermelon drink. With the abundance of watermelon, cucumbers, and herbs this time of year, it’s so easy to make and one of my favorite ways to stay hydrated in the hot weather.

This recipe takes approximately 5 minutes to throw together and its oh-so satisfying. All you need is a blender and a fine mesh strainer. (unless you want to drink the pulp, which I do about half of the time).

There are two different ways I like to make this recipe, one with basil and the other with lemon and mint! Both are absolutely delicious, but I must say, I think the mint is the winner.

Watermelon Drink

This recipe doesn’t really use specific measurements. I just throw everything in a blender and adjust sweetness or flavor as I go.

Ingredients

  • 2-4 cups of cubed watermelon
  • 2-3 baby cucumbers
  • 2 tbsp maple syrup
  • 8-10 basil or mint leaves
  • 1 lemon, juice
  • 1 cup water
  • 3-4 ice cubes (this actually makes a difference, i found that the mixture gets quite foamy if you don’t add them)

Process

  1. Place all of the ingredients into your blender and blend until smooth
  2. Drink as-is for a pulpy drink, or filter using a fine mesh strainer to get the watermelon and cucumber pulp out
  3. Enjoy!

Alternative use, Popsicles!

I have been LOVING this drink and may have gone through about 3 watermelons over the past month just to make it. A few days ago, my friend and I stumbled across this popsicle mold and I knew EXACTLY what I was going to use it for. The one I got is very similar to this one, but mine came with reusable sticks!

My first round with the popsicles turned out fantastic and are a great way to cool down on a hot day, especially with the cooling effect of the mint and cucumber!
