In my house, we have been obsessed with making chicken salad. It’s such an easy way to prep multiple lunches for the week in a short about of time and they’re delicious. Before making our own, I was never really into eating chicken salad. However, with a fun variety of flavors and textures, it’s delicious!
In this recipe, we used a bunch of fresh herbs and flavorful vegetables to make a nutritious and satisfying lunch.
Green Goddess Chicken Salad
Who doesn’t love a rotisserie chicken? Rotisserie chickens make up the backbone of this recipe. It makes putting it together so much faster!
We use this to make sandwiches, as adult-lunchables to eat with crackers, and have found it’s a guest favorite when we have people visiting and want to have easy snacks ready to go.
It’s such a great way to make sure you’re eating some vegetables and getting your protein in for the day.
You’ll notice we have tomatoes in this recipe. They really are a must-have. When you bite into one, it has the perfect amount of sweetness and acidity that pairs perfectly with the rest of the salad and makes it feel complete.

Ingredients
- Rotisserie chicken, shredded
- 1 large fennel bulb, finely chopped (we had a bunch of tiny ones from our local farm, so use what you have!
- 1 large watermelon radish, finely chopped
- 3 scallions, finely chopped
- a bunch of cilantro, dill, and thyme, finely chopped
- 1 cup of mayo
- small cherry tomatoes
- salt, pepper, garlic powder

The Process
- This recipe is so simply, just shred/chop all your ingredients, them them in a bowl, add mayo, season, and mix well.
- You’re done!
An alternate, our basic Chicken Salad Recipe
While I may have called this recipe basic, it really is far from it. Our go-to chicken salad recipe is absolutely DELICIOUS. I’ve had family members that typically hate chicken salad tell me that it’s one of the best they’ve had. The key is to season it well and add in something sweet to add of flavor diversity.
The process to make it is the same as above!
Ingredients
- Rotisserie chicken, shredded
- 2 stalks of celery, finely chopped
- 2-3 carrots, finely chopped
- 3 scallions, finely chopped
- grapes, quartered (this is a must have)
- salt, pepper, paprika, chipotle, and dried thyme
- a little bit of honey
