If there’s anything I know about quiche (this could be delusional), it’s that ANYTHING you throw in there will taste amazing.
I think this quiche is the perfect example. I knew I wanted a low effort and low prep lunch option to take to work this week and quiche sounded like a great example. We happened to have a few random vegetables sitting in our fridge that needed to be used and thought “why not throw ’em in!”
The result sounded a little odd at first, but I promise it’s SO GOOD. I hope this is inspiration to give your own little odd-combo quiche a try. Also, they actually freeze pretty well if you want to prep easy ready-to-go meals!

Anything you want Quiche
This recipe makes a HUGE quiche. We use a full dozen eggs, so it will for sure feed you for days!
This recipe made two quiches for us and was more than enough for two people to have for lunch every day for a week.
Ingredients
- one dozen eggs
- 2 pounds of ground meat (we used venison)
- 3/4 cup heavy cream
- 1/2 cup of cottage cheese
- 1/4 cup shredded gruyere
- 1 onion, finely diced
- 2 carrots, chopped
- 2 cups of spinach
- 1/4 head of cabbage, cut thin
- 3 spoonful’s of cranberry sauce optional
- dry sage to taste optional
- salt and pepper to taste
- pie crust using your favorite recipe (or use the one included in Steph’s recipe)
Process
- Prepare dough for crusts and place into pie dishes.
- Brown your meat of choice and add the other vegetables you are using. Cook through.
- While the meat and veggies are cooking, crack 12 eggs into a bowl and add the cream, whisk until combined.
- preheat your oven to 375 degrees
- Once the meat and veggies are fully cooked, add them to the egg mixture with any additional add-ins (like cranberry sauce, herbs, and salt and pepper).
- Pour the egg mixture into the pie crusts. It’s better to do this once the egg mixture is cooled so it doesn’t warm the dough too quickly.
- Put into the oven and bake until the quiche is fully set, this can take anywhere from 35-55 minutes depending on the type of die dish you are using.
