I am not sure what everyone’s social media feed looks like these days, but this sourdough croissant loaf has been EVERYWHERE. It was created by a woman named Amy and is a simple way to make a flaky, buttery bread that is the perfect addition to any breakfast.
After wanting to try it for quite some time, I finally made some and it did not disappoint.

Sourdough Croissant Loaf
This recipe makes one loaf of bread and is absolutely begging for the addition of chocolate chips.
My first attempt at making this loaf turned out a bit more holey than I expected, but it had a fantastic texture and flavor.
For our sourdough loaf, I recommend following your standard, preferred method. The recipe I use can be found here
Ingredients
- 300g (1 cup) of Sourdough starter
- 300g (1-1/4 cups) of luke-warm water
- 400g (2-1/2 cups) of bread flour
- 12g (3 tsp) of salt
- 110g (one stick) butter
The Process
- Mix your active starter, water, flour, and salt in a bowl.
- Grate the whole stick of butter and immediately place in the fridge. It is important the grated butter does not melt before we get the bread into the oven. Use your fridge during this process!!
- Complete your typical preferred number of stretch and folds (kneading).
- On the last round of stretch and folds, fold in all of the grated butter until it is well dispersed throughout the dough.
- Allow the dough to complete bulk fermentation until approximately doubled in size. (3-5 hours)
- Once bulk fermentation is complete, form your loaf (I use the letter fold method, meaning i lay the dough out and fold it into thirds to create a nice dough ball).
- Place in a banneton and into the fridge to ferment overnight, this will help to make sure your butter doesn’t melt!
- After at least 8-10 hours, preheat your oven and dutch oven (or cooking container) at 450 degrees. Once preheated, remove your loaf from the fridge, score it, and place it into a hot dutch oven.
- Cook the loaf for 35 minutes with the lid on and for 20 minutes with the lid off.
- Done! You have a buttery and flaky croissant loaf!
