Time to start pizza! This New York style pizza is so yummy and doesn’t require anything special. A pizza stone/steel is always better for a pizza crust – but luckily there are fun work arounds to provide similar results.
If you don’t have a pizza stone – you can put a cookie sheet in the oven while its pre-heating! Some people place it upside down, and some people place it right side-up. Try out both and see which one you like.
The overall theory of why you want a pizza stone, is it absorbs heat and helps heat the oven more/retain heat to cook the bottom of the pizza. A cookie sheet may not be as effective at this, but it still is better than nothing!
I will say – I use a scale for everything to measure. If you don’t have one and you want one, they are super cheap. BUT you can do easily do estimated conversions online.
Recipe – pizza dough
- 150g of All-Purpose Flour
- 90g Water
- 4.5g Salt
- 4.5g Olive Oil
- 3g Sugar
- 0.75g Instant Yeast
- Canned tomatoes (I Use)
- Block Mozzarella
- Pecorino Romano or Parmesan
- Your favorite toppings!
This will make one pizza.
Instructions
- Mix the following ingredients in a bowl and kneed the dough for 5-10 minutes
- The dough should be combined and smooth!
- Place the dough in an oiled bowl and cover. Let the dough rise in the fridge for 12-48 hours
- Try to use before 48 hours in the fridge
- Pull out the dough an hour before you plan to use it, and preheat the oven to the hottest oven setting. 500°-550° is ideal for a home oven if you can! Make sure you have the pizza stone (or alternative) in the oven to preheat too.
- Making Pizza Sauce: I combine tomatoes, 1 tbsp of sugar, and salt to taste. Feel free to add in any Italian seasonings you like. I combine in a blender.
- Grate the amount of cheese you want, and get ready to stretch the dough.
- Flour your work surface. Stretch the dough to your desired size and thickness. I try to make my pizza dough pretty thin to match the New York style. But frankly it’ll taste bomb either way.
- If you have a pizza peel that is sweet – feel free to use that! Or just pull out the preheated surface you plan to cook on, and assemble your pizza on that.
- Assemble the pizza in whatever order you want. Just make sure to sprinkle pecorino romano/parm on top!
- Put on the bottom rack of the oven to cook for 5-7 minutes – or until it looks done
