Blueberry Peach Sheet Cake Recipe

This recipe is something I came up with during the lockdowns in 2020 and it’s been a summertime favorite ever since. I have taken this cake to birthday parties, summer cookouts, and dinner parties. It’s always a group favorite and is something I look forward to making every year.

The texture to a coffee cake and is topped with a blueberry-peach glaze. Read along to learn how to make this delicious cake!

Blueberry Peach Cake

This cake is best made with cleaned and dried fresh blueberries and peaches in season, but I have made this recipe with home-frozen blueberries and peaches that we had canned the year before. If using frozen or canned fruit, strain the liquid and save for the glaze. Also, use an additional half to full cup of flour to ensure the consistency is correct.

The goal is to have a brownie batter consistency.

Ingredients

  • 3 eggs, beaten
  • 1 cup olive oil
  • 1 cup brown sugar
  • 2 peaches, finely sliced (I typically leave the skin on, but do what you like)
  • 2 cups blueberries, washed and dried
  • 2 cups all purpose flour (add another 1/2 cup if using frozen or canned fruit)
  • 1 tbsp baking powder
  • 1 tbsp cinnamon (or to taste)
  • 2 tsp salt

for glaze:

  • peach juice (squeeze out of a peach slice or from canned peaches)
  • 4 blueberries, mashed
  • 1 cup confectioners sugar

Process

  1. Oil and flour a 9×13 pan and set the oven to 375 degrees.
  2. Mix wet ingredients (eggs, oil, sugar) in a medium sized mixing bowl
  3. Add the dry ingredients and mix well (flour, baking powder, cinnamon, salt)
  4. Mix peaches and blueberries to batter and mix, make sure texture resembles brownie batter
  5. Once the oven is preheated, add the batter to the pan and place in oven. cook for an hour, or until the top is lightly browned and a fork inserted in the middle comes out clean.
  6. When done, allow the cake to cool for 30 minutes and make glaze.
  7. add peach juice and mashed berries to a bowl and slowly add the confectioners sugar until fully incorporated. Should make a runny glaze. pour over cooled cake and enjoy!
