I have seen a couple pasta recipes similar to this one on Pinterest and it seems like a lot of them really overcomplicate such an easy dish. In general, I noticed this pattern when looking at recipes online.
This creamy tomato Italian sausage pasta is the opposite of difficult. Actually, I had a bunch of these ingredients in the fridge that needed to be used up and that is how I made this recipe. Also, the majority of the ingredients are pantry staples.
To take the simplicity of this recipe even further, it is all made in one pan. You even cook the pasta in the same pan as the rest of the ingredients. You just need to make sure you use a pan with tall edges or a pot.
This recipe should only take about 25 minutes!

Ingredients
- 2-3 cups chicken stock (Sub: vegetable stock)
- 2 cups of marinara (Sub: tomato sauce)*
- 1-2lbs of Italian sausage (Sub: any other ground meat)
- 2 Bell Peppers
- A couple garlic cloves
- Seasonings: Salt & pepper, Basil, oregano, parsley (Italian seasoning works fine)
- 16oz of dry pasta
- 1/4 cup of sour cream (Sub: heavy cream or half & half)
- Cooking oil
- Optional: crushed red pepper flakes
As you can tell, I am all about making substitutions based on what you have at home. There is no need to go out and buy extra ingredients to make this work!
*If you have canned tomatoes, but not tomato sauce or marinara, you can simmer the canned tomatoes on the stove and they will break down into a wonderful homemade marinara. Season to taste.
Recipe
- Cut bell peppers and sauté in your oiled pan until they are softer and a bit charred
- Pull out the cooked peppers and set them back onto the cutting board. Fully cook the Italian sausage in the pan.
- Chop the the garlic and add into the pan and add Italian seasonings + salt and pepper to taste
- Add the chicken stock, marinara, and dry pasta into pan with the cooked meat
- Add extra chicken stock or water into the mix, to ensure the pasta is covered in liquid
- Cook the pasta for the time recommended by the box, and stir every couple minutes
- Stirring is necessary to make sure all of the pasta cooks evenly and has time in the liquid (no need to add more water, the pasta will absorb the liquid. Stirring is the best bet.)
- Once the pasta is partially cooked, stir the peppers, optional crushed red peppers, and sour cream into the mixture
- Once the pasta is cooked, stir thoroughly and enjoy!!







This dish is so creamy and easy – it is unreal . I make my own marinara and chicken stock, so those are something we always have in hand. Also, I am American, so I always have sour cream in the fridge that needs to be used up.
If that is not the case for you, feel free to change up the recipe based on your staples. BUT this version tastes amazing and is a perfect fall dish so 10/10 recommend. Plus, a slice of sourdough is the perfect combo of tangy to compliment the sour cream in the dish.
