Turkey Reuben Sandwich – Best Way to Use Thanksgiving Leftovers

Are you looking for a perfect way to use up your leftover thanksgiving turkey? This recipe is simple, and nothing like the usual recipes you will find. You can be extra (like me) and make all of the individual items that are a part of this meal, or you can buy them from the grocery store pre-made. Either way you will not regret it!

I plan to make posts on how I made all of these individual parts for this sandwich, but I figured releasing this recipe first would be a great teaser for what is to come (Rye sourdough, smoking a turkey, making sauerkraut, and homemade thousand island dressing)!

This recipe will be short, simple and delicious! (Just like our other recipes *wink*

Ingredients
Recipe
  1. Preheat 2 skillets on the the stove at medium to high heat.
  2. Spread butter/mayo/oil of choice on one side of the bread – put buttered side down into one of the skillets
  3. In the other skillet, make a layer of turkey on on half and a layer of sauerkraut on the other half. Let these sauté for a couple of minutes. The turkey and sauerkraut both start to caramelize in the pan.
  4. Once the bread starts to toast nicely, layer the turkey and sauerkraut on to one half of the bread – top with swiss cheese to melt over the sandwich.
  5. Add the thousand island on to the other slice of bread.
  6. Turn heat off when the swiss cheese is melted and the bread is toasted to your liking.
  7. Flip the sauced slice of bread on-top of the rest of the sandwich.
  8. Cut and enjoy!

I can’t begin to express how quick and delicious this meal is. Nothing is better than a deli-style sandwich at home. This is such a warm and filling meal and is great paired with soup! A perfect fall meal.

That being said – this meal tastes better than these final pictures look. I like my Reuben’s PILED with sauerkraut and thousand island dressing, so needless to say there is no way to easily picture this sandwich without it just looking a bit sloppy. Sorry not sorry.

Like previously mentioned, there will be a lot of follow up posts on how I made the individual parts of this meal. Making homemade dressings are so easy, rye sourdough is essentially the same recipe as my original sourdough, and homemade sauerkraut lasts for so long in the fridge!
