Easy Crock-Pot Buffalo Chicken Dip – Hidden Vegetables

This buffalo chicken dip recipe is a perfect winter snack. It is hearty, full of vegetables and protein, and requires no cooking skill whatsoever.

Full disclosure, this isn’t completely my brain child. You can buy a bottle of Frank’s Red Hot Sauce and get the most of this recipe off the bottle – but I add a lot of vegetables and you can’t even taste them.

Ingredients
  • 1 Rotisserie Chicken*,
  • 1 package (8 ounces) cream cheese
  • 1/2 cup Frank’s RedHot® Original Cayenne Pepper Hot Sauce
  • 1/2 cup ranch dressing
  • 1/2 cup blue cheese crumbles (optional)
  • 1 bell pepper, diced
  • 1-4 handfuls of spinach, diced smaller
  • 2 carrots, diced

Another veggie that I think is a nice addition: Brussel sprouts cut into small shreds! Go crazy and add more veggies based on your personal taste. You really can’t even taste them anyways.

Recipe
  1. Debone and shred the rotisserie chicken*
  2. Dice the bell pepper, carrots, and spinach into small pieces
  3. Add all of the ingredients into the crockpot
  4. Cook on low for 6 hours, or cook on high for 3 hours*
    • About an hour in, the cream cheese will be melted. Stir it into the rest of the mixture

*Cook long enough for the carrots to be cooked through. Depending how small you cut them, this timing may change.

This buffalo chicken dip takes minimal effort and is pure reward. We like to eat this with tortilla chips or with sliced bell peppers. Both provide such a great crunch, but they are mood dependent for sure.

Also, if you aren’t a fan of spice, you can customize the heat by adding in more or less Frank’s Red Hot.

Or, if you don’t like vegetables at all – just go with the original recipe that Franks gives. It is fantastic and takes even less time since you don’t need to wait for the vegetables to cook.
