Something I miss the most about living in Michigan is the access to amazing Korean food. Maine, especially the area I live in, doesn’t have a big variety of cuisines. So, what do you do when you’re craving your favorite bibimbap restaurant? Make some at home!
This recipe was thrown together in about 30 minutes and was SO much easier than I expected. I made it even easier by steaming my meat and veggies in the same pot that I was cooking my rice in. The resulting dish was so flavorful, satisfying, and helped me use up some veggies that we got from our CSA from a local farm.

Bibimbap inspired rice recipe
This recipe made SO much food. We ended up having enough for 6 servings, so this also makes a fantastic meal prep.
Make sure to use any veggies you have on hand. I think this would be great with swiss chard, scallions, cabbage, or any other greens.






Ingredients
- 2 cups rice (I used basmati for this recipe)
- 1 lb ground turkey
- 2 cups beet greens, chopped
- 4 garlic scapes
- 2 inch grated ginger
- 1/4 cup wakame seaweed, dried
- 1/4 cup gochujang
- 3 tbsp cup soy sauce
- 3 tbsp cup rice vinegar
- 1 tbsp chili sauce
- 1/2 cucumber sliced
- 1 carrot sliced
- 2 eggs, fried
- 2 radishes, sliced
The Process
- In a medium sized pot, add 2 cups of rice, 3 cups of water, the ground turkey, beet greens, garlic scapes, seaweed, and half of the ginger. Cover with a lid and allow to come to a boil. Once boiled, turn the head down to low and allow to simmer for about 20 minutes, or until the rice and turkey are fully cooked.
- While the rice and meat are cooking, combine the gochujang, soy sauce, rice vinegar, chili sauce, and ginger in a container.
- Once the rice and turkey are fully cooked, mix the turkey, rice and veggies well. Add your sauce and mix until combined.
- Serve the rice mixture in bowls and add cucumber, carrot, radishes, and a fried egg on top.
