Winter is not only the perfect time to slow down and reflect on your life goals, it is also the time to get outrageously sick. It’s flu season baby and nothing is more perfect for flu season then a simple butter pasta dish with hidden vegetables.
This dish is a similar vibe to Pastina (an Italian dish), also known as penicillin soup. The only real difference is this recipe was not made with the love of a Nonna (instead by the festering evil heart of Steph) and it is using regular pasta instead of Pastina or Stars pasta.
This recipe should take less than 30 minutes to make.
Ingredients
- Box of pasta
- ideally a “smaller” type of pasta
- 32 oz Chicken stock (anywhere between 3-4 cups works)
- 1 Carrot
- 1 Onion
- 3-4 Garlic cloves
- 1 Tbsp Butter
- 1/2 cup Parmesan
- Salt, pepper, generic seasonings you like
*you will need a blender of some sorts to complete this recipe*

Recipe
- Bring the chicken stock to a boil in a sauce pan
- Roughly chop the carrot and onion
- Add the carrot, onion, and garlic into the boiling stock, boil until soft (5ish minutes)
- Use an immersion blender/regular blender/food processor to blend the cooked veggies into the stock to turn it into a thicker sauce, salt to taste
- Transfer the sauce back into the sauce pan and add in the pasta
- Cook the pasta in the stock/veggies sauce as directed on the box
- You may need to add some water into this mixture to make sure the pasta has enough fluid to boil it properly (you could use additional chicken stock too)
- Add in the butter and parmesan, add salt + pepper to taste. Season with whatever else you enjoy too!
