For anyone new here: legumes have me in a chokehold. I have began my decent into becoming a bean girl and I love it. Not only are legumes full of nutrients, they are also so inexpensive and easy to store dried in the pantry. Needless to say, I have 20lb of butter beans in my pantry that I bought for $20.
This recipe is made with mostly pantry staples, and is super easy, delicious, and filling!
This recipe should take around 30 minutes (assuming your beans are already cooked).

ingredients
- 1 onion, diced
- 2 can of Butter Beans
- Equivalent to 1.5 cup of dry beans – need to be soaked and cook prior to cooking
- 28oz can of tomatoes (I get San Marzano)
- Salt + pepper + Red pepper flakes + Italian seasoning + any other seasoning you enjoy
- Optional: Heavy cream and 4 oz of Ground pork
- I had leftover pork from another meal, but any fatty meat would be a great option to add a little more depth to the flavor. Definitely not necessary though

Recipe
- Dice the onion
- Add oil to the pan, and add your dry herbs/red pepper flakes. Let them cook in the oil for a minute
- Add the onions and sautรฉ on medium heat for 5ish minutes, or until they are translucent
- Salt at this step to draw out the moisture and cook them down nicely
- Add in the canned tomatoes and simmer for 10ish minutes – season to taste
- If using the whole canned tomatoes, just crush the tomatoes in your hand when adding them into the pan
- Combine the white beans into the tomato sauce and let the mixture continue cooking for another 20 minutes.
- Add the optional meat at this step to allow for the flavors to combine while cooking
- Add optional heavy cream once the marinara is cooked down. Serve on pasta!

I am legit eating this for dinner while I type this recipe out. Seriously such a great dinner option!!
