Cucumber Sandwiches – Steph’s Favorite Easy Summer Recipe

This is the best summer meal. You can try to fight me on this, but I will either win or not engage because I don’t engage with people who are wrong. Please try this cucumber sandwich and tell me I am right, thank you in advance!!

Not only is this meal refreshing, it is easy, inexpensive, and also is a great option to take to BBQ’s because it holds up well.

Also, it makes you feel like you are living in Bridgerton eating cute little cucumber sandwiches.

Ingredients
  • Block of cream cheese (8 oz)
  • 4 tablespoons of Mayonnaise
  • 1-2 Tbsp chopped dill (fresh or dried)
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste, I love using turmeric too
  • Cucumber, sliced
  • White bread
  • Optional: 1-2 Tbsp chives or chive blossoms
Ingredients
Recipe
  1. Chop up herbs if fresh
  2. Combine the cream cheese, mayo, herbs, and seasonings until well mixed
  3. Slice the cucumbers into desired thickness
  4. Coat each side of bread with the cream cheese spread
  5. Add cucumbers and enjoy!!

I become weird with my eating habits in the summer months. Something about the heat just makes me not want to eat anything heavy. This basically turns me into a vegetarian. I stick to salads with chickpeas, eating a lot of raw veggies, and handfuls of fruit if I can get my grubby mitts on them.

Needless to say, this is a perfect food that I can eat all summer long without withering away into a little whisp of a person. Also, this is a great boat food to pack in the cooler.
