Like most sane adults, I love potatoes. Not only are they a great source of nutrients, they are cheap and I am in a lot of debt!!! I usually make homefries in the airfryer; however, sometimes I am feeling crazy and want hashbrowns.
Not sure how I do it, but I always burn the hashbrowns I make on the stovetop. My partner, Sammy, is fantastic at it, but if he is not around I must find a way to get my potato fix myself.
Ingredients
- Potatoes
- 1 onion
- Salt, pepper, seasonings, oil
- I use Lawrys, paprika, turmeric, garlic powder, salt and pepper
*you will need an airfryer (DUH!), and also some parchment paper/aluminum foil*

Recipe
- Grate the potatoes and onions
- If you have a food processor with a grating attachment, that works great for this!
- Rinse the potatoes with water to get excess starch out
- Lay out the potatoes to dry a bit on a towel
- Combine the potatoes, onions, oil and seasonings
- You don’t want too much oil that they are dripping, but you want there to be a nice coating of oil on the potatoes
- Line the bottom of the airfryer with aluminum foil/parchment paper
- Lay the potatoes out in the bottom, try not to layer them too high or they won’t crisp up well
- Try for 1/2 inch thick
- Airfry for 15 minutes at 400°
- Pull out the liner and potatoes and flip the hashbrown puck to the other side
- Airfry for another 10-15 minutes or until crispy.

I made these hashbrowns to go insides of the breakfast burritos I meal prep, and it is so yummy.
