This is the super easy recipe I use to make corned beef for Reubens when I don’t want to smoke the meat.
I’m not sure how often y’all have smoked meat before, but it takes a while. I am a busy person and as much as I enjoy a smoked brisket, I barely have the time.
This is not going to be a groundbreaking recipe, so if that is what you expect, please feel free to comment about it. I feed off of hate.
This recipe takes minimal effort, and 4-8 hours of time.
Recipe
- Corned beef brisket
- Sauerkraut (I just used canned sauerkraut)
Instructions
- Add the corned beef, spice packet (usually included when you buy beef that has been corned), and 1-4 cups of sauerkraut into the Crock-Pot
- Cook on low for 8 hours
- Or cook on high for 4 hours
- Shred the corned beef and strain out the liquid
- I save the sauerkraut/brisket liquid to add into broths for soup! It’s so full of flavor so why waste it

Yup, that’s it. Pretty easy and I hope to enjoy it!
