What Herbs Am I Growing This Year?

The herb seeds are officially planted (kind of). I planted most of the herbs in the winter in our window sill. I still need to plant my chamomile, rosemary, and dill. I will most likely plant extras too!

I love the idea of drying out my herbs and having enough to last the year! I am not sure if that will be the case this year, since there are a lot of other spices we use that aren’t on this list. But one year at a time.

Chamomile

Have you seen chamomile lawns? We already have the wildflowers, clover, and creeping thyme for our lawn, but I am thinking about adding a chamomile lawn section too instead of planting it in a container.

This way I can have some lovely tea (without PFAS concerns) and it will be such a nice section for pollinators and just general viewing.

Basil, parsley, oregano

These ones are the classics. I use so much of these herbs and these are some of the herbs I have grown and dried in the past.

I have like 4 types of basils, but I think I will be trying out my Franchi basil. I got it from the local Italian grocery store and I am excited to try it out.

Pro-tip: use these seasonings in rib rubs!!

Chives

I am hoping to get a nice chive plant in the ground and try to keep it over the winters. I know it is possible in Maine, our old apartment we rented had them planted outside and survived all winter long!

The ones I planted inside on the window sill never really grew big, so I may scrap them and just plant some seed in the ground.

Dill

Another herb I have grown and dried in the past! We make a decent amount of Mediterranean food, so some nice fresh dill is perfect in the summer. But even when it is dried it has held its flavor really well in the past. Plus the dill flowers are precious!

Thyme & rosemary

I don’t use a lot of thyme or rosemary in my day to day life, so I am more just doing this for fun. Maybe I will start using it more if I have some fresh to add into more recipes!

Peppermint

Tea we drink constantly! This has done AMAZING in my indoor container, but they definitely need more space. I am hoping to get like 1lb of dried peppermint if that is even possible this year. We have peppermint tea everyday.

Pro-tip round 2: Honey and peppermint tea is the best calming down drink at night!
